Mum’s Cassoulet

This easy recipe is a family favourite, I find it a useful dish if I want to pre-prepare something before a shift as it only takes 5 mins to make and 20 to cook, its also a good way of sneaking in some mid-week veg…

Chop 1 x onion, 2 x cloves of garlic and 8 sausages and fry them in olive oil in a frying pan add a decent amount of mixed herbs and 2 x vegetable stock cubes – after a few mins add approx 2/3rds of a can of cider bring up to a simmer and add 2 x tins of beans ( I usually use black eyed and borlotti beans but anything will do!) – Simmer for approx 20 mins – when I add the beans I usually chuck in any leftover veg I have lying about but that’s entirely optional! Serve with warm crusty bread….
