My winter stew…

This is the ultimate comfort food in our house and surprisingly, despite the high vegetable content, the girls all really enjoy it! I like it as it takes about 10 mins to make and then you can either stick it in the slow cooker all day or simmer it for as long as you’re in the house! It’s a great one for cooking in advance if I know I’ll be short for time in the evening.

Jamie Oliver’s Fajitas!

A lot of folk are snobby about Jamie and I’ve never really understood why! His meals are delicious, nutritious, within a reasonable budget and usually something my girls will eat! What’s not to love?! This is a family favourite, takes 20 mins to prepare and cook and pretty healthy! Winner!

Thinly slice 6 x chicken breasts, 1 x red pepper and 1 x red onion – Add to a bowl with smoked paprika and Ground cumin to taste ( I use at least a tablespoon of paprika but much less cumin ) , the juice of 1 x lime and olive oil – Fry together in a large frying pan for approx 10-15 mins, until the chicken is cooked – Serve with warm tortilla wraps and anything else you wish! I serve sour cream, guacamole and grated cheese.

I make my own guacamole as its cheaper and nicer! In mine I just fork mash 1 x avacado, 1 x chopped tomato, 2 x garlic cloves, lemon juice and salt and pepper! Easy!
