My winter stew…

This is the ultimate comfort food in our house and surprisingly, despite the high vegetable content, the girls all really enjoy it! I like it as it takes about 10 mins to make and then you can either stick it in the slow cooker all day or simmer it for as long as you’re in the house! It’s a great one for cooking in advance if I know I’ll be short for time in the evening.

Chop an onion, 2 sticks of celery and a couple of carrots and fry them in olive oil – Add approx 500g stewing meat of choice and approx half a jar of mixed herbs and mix well, then add your chopped veg of choice, I usually add swede and potatoes and then any other leftover veg I have around stir in approx 1 x tblsp. plain flour and then pour in approx a pint of vegetable stock (2 x cubes). Stir well and season with salt and pepper to taste – then either cook on simmer for a minimum of an hour, or bung it in a slow cooker! Serve with crusty bread! Yum!
