Paella

I love this recipe! You can probably guess where I originally got it from, but I have tweaked it a little…the girls even eat it, even if they do pick a few bits out!

Fry a couple of rashers of sliced smoked bacon – half a chorizo ring sliced – approx 2 x diced chicken or turkey breasts and a small packet of chopped parsley for about 5 mins – add 1 x onion, chopped and a couple of cloves of crushed garlic – at this stage you can add a pinch of saffron if you have it, but it’s not in anyway essential! Add salt and pepper and approx 1/3 of a box of arborio rice and pour in approx a pint of chicken stock – mix it all, bring up to a simmer, pop a lid on and cook for approx 15 mins, checking and stirring it every 5 mins or so! Add a packet of mixed seafood and peas, and cook for another 5 mins, then squeeze lemon juice in and serve!
