Chorizo Pasta

This is just delicious and another super quick easy dish that we all love…another one from good old Jamie Oliver, I stumbled across it years ago on a free recipe card in Sainsburys…

Whilst cooking your pasta, fry half a chopped up chorizo ring and a couple of cloves of chopped garlic, in olive oil – when lightly fried add a tin of tomatoes and a small packet of chopped fresh rocket and parsley add salt and pepper to taste, if your sauce seems a little dry, half fill the tin from the tomatoes with water and add when the pasta is cooked, strain it and stir in the sauce and a diced mozzarella ball and approx 1 x tablespoon grated parmesan – serve and enjoy!
