Another Jamie Oliver recipe that I often use, this is my favourite version of a classic made easier by the fact you don’t have to faff about making a bechamel sauce, and it’s got some veg cunningly hidden in it too, so another winner!
Fry 2 x rashers of smoked bacon and a good sprinkling of oregano in olive oil – Add 2 x onions, 2 x carrots, 2 x sticks of celery and 2 x garlic cloves, all chopped, to the pan – Fry together for approx 5 mins then add 500g mince (turkey, beef or lamb) and 2 x tins of chopped tomatoes and a tin of water – chop up all the stalks from a packet of fresh basil and chuck them in – then simmer with the lid on for 45mins or so then stir in some chopped basil leaves and approx 2 x teaspoons of grated parmesan – then layer the mince with lasagne sheets and creme fraiche and grated parmesan – top with a creme fraiche layer and sliced tomatoes, basil leaves, parmesan and salt and pepper – cover with foil and bake in the oven at 190 degrees for 20 mins then remove the foil and cook for a further 35 mins. Serve with salad!
