Fish Pie!

A little bit faffy but a great one to pre-prepare and a good way of getting my family to eat fish! I buy a packet of fish pie mix from the supermarket as its cheaper and has the right amount and type of fish for us but you can use any fish to taste!

Put your fish into a measuring jug and fill the jug with milk to either bring to the boil in the microwave ( I cover with clingfilm if doing this to eliminate the fishy smell ) or in a small saucepan strain off the milk and put it to the side Put the fish in an oven proof dish and add 3 x boiled eggs sliced into halves, 1 x chopped red pepper and a couple of handfuls of frozen peas in a small saucepan, add 1 x chopped onion, approx. 1 x tablespoon of plain flour and a lump of butter – stir together over a low heat and then slowly add the milk that you earlier cooked the fish in if the sauce is a little thick, just add a bit more cold milk Bring to the boil and pour the sauce over the fish mixture in the dish and allow to settle top with Mashed potato or puff pastry – bake in the oven at approx 170 for 30-45mins before you’re ready to eat it! I often pre-make it and keep it in the fridge until dinner time! Serve with fresh veg…
